hungry girl-nola

Ryan got me this cookbook for Christmas and I finally tried a recipe out of it!

Actually, I first tried to make a lo mein dish with Tofu noodles, but it was a huge flop and the recipe quickly turned to high calorie fiasco {enter - ramen noodles}.

I didn't really want Hungry Girl for the main dish recipes, but more for desserts and snacks. I love my snacks and wanted to try making some extra super yummy ones without all the extra calories. After reading through most of the recipes, I've come to the conclusion that I probably wouldn't subsititute every ingredient, but most of them have a good low-cal/healthy base....if that makes sense.

Yesterday I tried the "hungry girl-nola" and it was GREAT!!

Here's the recipe {if this is illegal...someone tell me! haha}

Ingredients:
1/2 cup bite-sized freeze-dried apples
1/4 cup regular oats (not instant)
1/4 cup puffed wheat cereal
1/4 cup puffed rice cereal
1 1/2tbs. sugar-free pancake syrup

Directions:
Preheat oven to 274 degrees

Mix oats, puffed wheat, puffed rice, and pancake syrup until oats, wheat, and rice is coated with syrup.

Spray a baking sheet with nonstick spray and spread the cereal mixture out on the sheet.

Bake in the overn for 30-35mins, rearranging mixture with a spatula about half way through. Granola is done when crispy and lightly browned.

Allow to cool completely, then stir in apples.

Makes 1 serving.
